Chicken Tamale Pie

preparation

Preheat the oven to 350º. Grease a 2-quart casserole. In a mixing bowl prepare the muffin mix according to the package directions and stir in the Cheddar cheese. Set aside. In a saucepan combine the soup, chili powder, garlic, chilies, onions, corn, and turkey until blended and heat through.

Spoon the muffin mixture into the prepared casserole. Spoon the hot mixture over the muffin mixture to within ½ inch of the edge. Bake for 25 minutes, until the corn bread is golden. Garnish with additional cheese, green onions, and sliced cherry tomatoes if desired. Serves 6.

12-ounce package corn muffin mix
cup shredded Cheddar cheese
can cream of chicken soup
teaspoon chili powder
clove garlic, minced
4-ounce can chopped green chilies
cup chopped green onions
cup whole kernel corn
cups cooked shredded turkey, or ground in processor
Green onions and cherry tomatoes for garnish


adaptations

This recipe can be adapted for persons with more swallowing difficulties.

  • Use cream of celery soup in place of cream of chicken soup.

  • Use can creamed corn in place of whole kernel corn

  • Pass soup, corn and chopped green chilies through a food mill to remove seeds and skins. Then add to recipe above.

tips on the use of a food mill

A food mill is a stainless steel metal bowl with holes in the base that hooks over most kitchen bowls. A rotary handle in the center is attached to a flat blade that forces food through the holes when the handle is turned. This piece of kitchen equipment makes life easy for making applesauce or removing hulls and skins from foods, as the food passes through and leaves the debris behind. Some models have interchangeable disks. Most food mills have approximately a 3 quart capacity and cost about $30.00. Can be found at For Her Eyes Only or other kitchen stores.
