Susan Brumley, R.D., nutritionist at
the ALS Clinic in Phoenix, Arizona, was the first person to suggest
writing a cookbook for those with eating difficulties, since there
was such a lack of creative solutions in print. Her appreciation of
our efforts gave us the confidence that a dysphagia cookbook was
needed and possible.
Pamela Mathy, Ph.D., CCC-SLP, Director of Clinical Services at
Arizona State University’s Speech and Hearing Clinic, supplied the
information on general swallowing recommendations and general food
considerations that appear in the Introduction. Her individual work
with Jackie as well as her many public presentations and writings on
dysphagia helped crystallize the principles on which to base the
recipes.
Jackie’s neurologist, Todd Levine, M.D., Clinical Assistant
Professor at the University of Arizona and Director of Samaritan ALS
Clinic, graciously wrote the Forward. He understands eating
difficulties on a personal level, since during the writing of this
book he experienced a temporary feeding tube placement. He enlisted
his wife, Mary Landau-Levine, M.D., Pathologist with Scottsdale
Healthcare, to create the sketches for the Forward that illustrate
the swallowing mechanism and neuromuscular pathways. Our deepest
appreciation extends to Dr. Levine for inspiring his patients and
their caregivers to take proactive measures in their own care.
Many of our friends and relatives contributed recipes or cooking
ideas, which have been incorporated into the book. We appreciate the
special efforts they devoted to the project and thank them for the
good meals and hospitality at their homes.
The staff of the ALS Association, Arizona Chapter, has been a
constant source of moral and physical support. Through the
Association we have met and received inspiration from patients and
caregivers. We have also learned much about courage and commitment
from Curt Schilling, star pitcher for the Arizona Diamondbacks and
an Honorary Spokesman for the ALSA, and his wife, Shonda, who serves
on the board of directors.
Ron Pitkin, president of Cumberland House Publishing, saw the need
for this type of book, and editor Mary Sanford paid thoughtful
attention to myriad details. I gratefully acknowledge their support.
